Di and Dave are quintessential Queensland farmers; resilient, hard-working and salt of the earth characters. Despite being in the midst of drought, they have recently had to deal with the effects of Coronavirus. But in typical ‘farmer fashion’, it’s business as usual as they continue to ‘feed their village’.
Aswassi Cheesery is a purpose-built cheesery, milking parlour and farm outlet that’s tucked away in the Lockyer Valley, about an hour and a half west of Brisbane. As you pull up to the farm gate, there’s no mistaking the sounds of sheep bleating in the distance and it’s not long before they’re giving you a warm-sheepish-welcome.
Awassi sheep have a gentle, laid back nature. They are also considered one of the best milking breeds in the world which is why Di and Dave breed them primarily for their milk. The milk is naturally homogenised, high in fat and proteins, low in lactose and makes a very high quality of cheese. ….hmmm, cheese.
As a third-generation Dairy Farmer and second-generation Cheese Maker, you could say that Brie and Blue run through Di’s veins. She is an advocate for fine, local food and enjoys sharing their little slice of paradise with others. While group luncheons under the orchard have been put on hold, Di is making sure they’re still reaching their valued customers and getting their product out there.
If you live in Brisbane or Toowoomba, Di will personally deliver her cheese from her ‘farm gate to your front gate’ during her fortnightly deliveries. She does this so that she knows her cheese is getting to you exactly the way she wants it. You can also order a range of Awassi body products online, as well as a variety of other yummy products including jams, labnehs, figs and more. Little tip – the Fig and Ginger Jam is to die for.
There’s something to be said for knowing exactly where your food comes from and who the passionate people are behind the products you purchase. When you open your fridge to indulge in a little cheese and wine, you’re not just eating any ‘ol piece of cheese. It’s Di and Dave’s bespoke product, made with love from the sheep they so dearly care for. If that’s not a good enough reason to support local, we don’t know what is!
